The reason we measure pH (potential of hydrogen) is to tell how acidic or alkaline that substance is. Having the right pH levels is essential to a lot of things. For example, most alcoholic beverages have a pH under 7, or acidic, whereas most aquariums have a pH that is over 7, or alkaline. A well-maintained pH is essential to many things we do and use on a daily basis. The reading is taken based off of the ion activity in aqueous samples (things containing water). Studies have shown having the right pH for water is necessary for health. The world health organization has actually stated that demineralized water has its health risks. Demineralized water has a pH of under 7.
